4 eggs
2 1/4 cups milk
1 cup shortening
3 cups self-rising flour
1 tablespoon vanilla

Chocolate Ganache Icing:
24 oz. of semi-sweet chocolate chips
1 pint of heavy whipping cream

Layers:
Cream sugar and shortening until fluffy. Add eggs and mix. Add flour, milk & vanilla and mix. Spray 8” pans with non-stick cooking spray. Fill each pan with 3/4 cup of batter. Bake at 350º for 10-12 minutes. If you do not have 10 pans, it is important to clean the pans each time before you add batter. After cooling, stack the layers, separated by wax paper, and freeze them overnight.

Chocolate Ganache Icing:
In a double boiler or cast iron pot, combine chocolate chips and cream. Slowly heat and stir until well blended and glossy.

Assembly:
Spoon ~4 heaping tablespoons of icing between each layer & get to stacking!

* I always let my eggs sit out until they are room temperature
* Freezing the layers prevents it from sliding all over the place when you add the icing
* I always pour the cream over the chocolate chips and let them reach room temperature before I make the icing

You might have extra icing, which is great for dipping strawberries!
