1 cup salsa
3 eggs
1/3 cup all purpose flour
1 cup milk
1 1/2 cups shredded chedder cheese
1/2 cup shredded Monterey jack cheese

Directions:
Directions:
Spray a 9 inch glass baking dish with nonstick cooking spray. Combine eggs, milk, and flour in a bowl. Beat well until smooth. Combine cheeses in another bowl, reserving 1/2 cup for topping. Stir remaining cheese into the milk mixture. Stir in salsa. Pour mixture into baking dish. Top with reserved cheese.

Bake at 350º for 45 minutes, until set and puffy.
