4 salmon filets (about 2 –3 inches wide) 1 large bag of fresh spinach
2 cloves garlic (or 2 teasp. Jar garlic) Juice of ˝ lemon
Old Bay Seasoning Salt and pepper
Olive oil
2 inch log of goat cheese
2 tablespoon good quality balsamic vinegar

Directions:
Put the goat cheese in the freezer for about 10-15 minutes.
2. Pat the salmon filets dry, and dash with Old Bay Seasoning, Salt and Pepper to
taste
3. Pat dry spinach if it is damp
4. In a medium oven-proof skillet, pour a little olive oil to light coat the bottom of the
pan. Bring to medium heat.
5. Place the salmon filets in the skillet, and cook on 3 minutes on the first side.
6. Remove the goat cheese log from the freezer. Slice into four equal slices. Set
aside.
7. In another medium skillet, add a little olive oil, and add the garlic. Sauté for a
minute, and add the spinach. Toss lightly the wilt the spinach. Lightly sprinkle
with salt and pepper to taste. Take off the heat.
8. Turn the salmon over, and cook another 2 minutes.
9. Equally divide the spinach and mound on top of each filet. Top with the goat
cheese piece. Drizzle a little of the balsamic vinegar on top of goat cheese and
salmon.
10. Please skillet in the oven on 400 for 5-8 minutes to heat the cheese topping.
11. Serve with a rice pilaf and salad
NOTE: You can prepare more spinach if extra is desired for a side dish with the
salmon.
