2 Tbsp. olive oil
2 stalks celery, cut in pieces
2 carrot, cut in pieces
1 potato, diced
1 onion, chopped
Salt and pepper
1 (14-1/2 oz.) can chopped tomatoes
1 (14 oz.) can low salt chicken broth
1/2 cup fresh basil leaves
1 Tbsp. tomato paste
1 bay leaf
1/2 tsp. dried thyme
1-1/2 lbs. cooked chicken, about 2 chicken breasts, cut up

Directions:
Directions:
Heat oil over medium heat. Add celery, carrots, potato and onion. Sauté until onion is translucent, about 5 minutes. Season with salt and pepper to taste. Stir in tomatoes with juice, chicken broth, basil, tomato paste, bay leaf and thyme. Add chicken. Bring to a simmer. Reduce heat to medium-low and simmer gently uncovered until all is hot and vegetables are cooked. Remove bay leaf before serving.
