2 cups rolled oats
2/3 cup mixed nuts and seeds (like sunflower, pumpkin or sesame seeds, chopped walnuts, pecans, almonds, cashews, etc)
1/3 cup shredded unsweetened coconut, optional
1/3 cup chopped dried fruit, like apples
1/4 cup teaspoon ground cinnamon
dash salt
3 cups yogurt, plus extra for garnish

Directions:
Directions:
Combine the oats, nuts and seeds, coconut if you are using it, with the cinnamon and salt in a medium bowl. Stir in the 3 cups of yogurt, cover, and refrigerate overnight. Serve garnished with a dollop of yogurt.
