1 onion, chopped
1 bell pepper, chopped
1/2 tsp. each: salt, pepper, cumin, paprika and chili pepper
1/2 c. sour cream
3 tbsp. milk
4 oz. cream cheese
2 1/2 c. shredded turkey
1 1/4 c. shredded cheese
11 tortillas
1 c. additional cheese

Brown the onion and bell pepper. Add the salt, pepper, cumin, paprika and chili pepper. Mix together sour cream, milk and cream cheese. Mix the creamed mixture with the seasoning mixture. Divide the mixture in half, reserving half of it. Mix the turkey and 1 1/4 c. shredded cheese together. Add this to 1/2 of the creamed mixture. Heat the tortillas and fill each with turkey mixture. Place the enchiladas in buttered 9 x 13 inch baking pan, seam side down. Top with the remaining creamed mixture. Bake at 375ºF for 20-25 minutes. Sprinkle with 1 c. of cheese and bake for an additional 15 minutes. Enjoy!
