2 1/2 c. plain flour, 1 tsp. cocoa, 1 1/2 c. sugar, 1 oz. red food color, 1 1/2 c. vegetable oil, 2 eggs, 1 tsp. salt, 1 c. buttermilk, 1 tsp. soda, and 1 tsp. vanilla.
Filling:
6 c. powdered sugar, 1 tsp. vanilla, 12 0z. cream cheese, 1 1/2 c. chopped pecans, and 1 1/2 sticks butter.

Sift flour, salt, soda, and cocoa together; set aside. In another bowl, mix oil and sugar. Beat well. Add eggs. Beat well. Add food color and vanilla. Alternate flour and buttermilk. Mix well after each addition. Pour into 3 pans and cook at 350º for about 20 min. or until done. When cool, ice with cream cheese filling.
Filling: Sift sugar and set aside. Mix cream cheese and butter; and vanilla. Then mix sugar well into mixture. Add pecans and spread on cake.

I like to ice between the layers with just the filling then I add the pecans when I ice the outside of the cake.
