2 lb. dried pinto beans
2 tbsp. salad oil
1/4 lb. salt pork
6 fresh jalapeņos (remove seeds from all but one or two of the chiles and chop)
2 large onion, chopped
1 whole garlic pod
3 tbsp. garlic, minced
1 bottle (12 oz.) of beer
1 regular size can of Rotel hot diced tomatoes and chiles
1 medium can regular crushed tomatoes
1/2 bunch of chopped cilantro
2 tbsp. ground cumin
Salt and pepper to taste

In Dutch oven, add beans and cover with water. Bring to a boil, then turn off burner and let sit for an hour. Drain.

Heat oil in the Dutch over medium heat. When oil is hot, add salt pork and cook until just lightly browned. Add chiles, onion and garlic and continue to cook, stirring, until vegetables are soft (about 5 minutes). Add beans, tomatoes, and cumin; bring to a boil, stirring. Reduce heat, and bring to a simmer, stirring often until beans are tender and most of the liquid is absorbed (about 3 - 4 hours). In last 1/2 hour, add 1 can of warm beer. In last 10 minutes, add cilantro.
