3 cans - Van Camps Pork and Beans
1/2 lb - bacon (leaner the better)
1/2 onion - (chopped)
1/2 bottle - KC Masterpiece BBQ Sauce - Original
1/2 - 3/4 cup - Brown Sugar - loosely packed

Take a 2 1/2 quart pan, put on stove top, and set the heat at "7" on an electric stove. (setting may vary -just

Add bacon that has been cut up in 1/2" wide chunks. I usually use a good pair of kitchen scissors to cut the bacon that is just ever so slightly frozen. Makes it so much cleaner than trying to cut thawed bacon.

Add chopped onion.

Continue to fry the bacon stirring to keep it from burning. When the bacon is almost browned - add between 1/2 and 3/4 quarters cup of brown sugar. (the amount used is to suit your taste).

Continue to stir the mixture carefully watching it. As the brown sugar starts to caramelize, stir in the three cans of pork and beans. It is really important that you do not let the brown sugar really caramelize as it will get hard and sticky..

Stir the mixture thoroughly to get the bacon and onions spread throughout the beans.

Add 1/2 bottle KC Masterpiece to the mixture. Stir in thoroughly.

Bring to a slight boil (not full) then lower heat to simmer stirring occasionally to keep the beans on the bottom from burning. Simmer for as long as you need to (longer the better to cook in the flavors). I generally shut the heat off about 10 - 15 minutes prior to serving to let the beans cool a bit so that they can be readily eaten.

I like brown sugar therefore I tend to make my beans a bit sweeter. You can adjust the brown sugar to your taste.

The BBQ sauce does not have to be KC Masterpiece but I have found that it has additional sweetness and BBQ flavor that adds to the beans.

These beans can be made up ahead of time. Often I make them the night before and store them in a slow cooker in the microwave. They tend to really soak up the flavor overnight however you could also make them in the AM. Shut them off and let them sit until you are ready for dinner and then just reheat them.

Obviously other brands of P&B can be used. I try not to use any "flavored" beans - just regular P&Bs.


SERVING IDEAS:

Besides a side dish. . . .

Pour over a hamburger with or without the bun. Also good on hot-dogs in place of chili.

Use them as a chip dip - suggest heavy chips like rippled or kettle cooked.

Pour them over buttered macaroni.

You can cook polish sausage with them.
