1 lb. hot Italian sausage
1 large onion, chopped
1 garlic clove, pressed
3 (15.6 oz.) cans beef broth
2 (14.5 oz.) can diced tomatoes, undrained
1 (8 oz.) can tomato sauce
1 cup dry red wine
2 carrots, thinly sliced
2 tsp. dried Italian seasoning
2 small zucchini, thinly sliced
1 (9 oz.) pkg. refrigerated cheese-filled tortellini
1/2 cup fresh shredded Parmesan cheese

Remove and discard sausage casings. Cook sausage, onion and garlic in a Dutch oven over medium-high heat, stirring until sausage crumbles and is no longer pink. Drain.

Return mixture to pan. Stir in broth and next 6 ingredients; bring to a boil. Reduce heat; simmer 30 minutes. Skim off fat.

Stir in zucchini and tortellini; simmer 10 minutes. To served, ladle into bowls, sprinkle each service with Parmesan cheese.

Note: Put only the number of tortellini in the soup that you are going to eat immediately. This soup freezes great but you don't want to freeze the tortellini with it. The pasta will soak up all of the juice. When you unthaw the soup the next time, add more tortellini as desired.
