3/4 pound unpeeled, medium size fresh shrimp
1 tsp. Creole seasoning
18 (1/4" to 1/2" thick) baguette slices
1/2 cup (2 oz.) shredded cheddar cheese
1/2 cup (2 oz.) shredded pepper jack cheese
2 tbsp. minced celery
2 tbsp. minced onion
2 tbsp. mayonnaise (can adjust to taste)
2 tsp. chopped fresh dill
1/4 tsp. salt
Dash of ground pepper

Directions:

Bring 2 1/4 cups water to boil in a large saucepan; add shrimp and 1 tsp. Creole seasoning and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water.

Peel shrimp; devein, if desired. Cut 9 shrimp in half lengthwise; set aside. Dice remaining shrimp.

Bake baguette slices on a baking sheet at 350º for 10 minutes or until lightly toasted (you may want to brush bread slices with butter and sprinkle with garlic salt before cooking).

Stir together diced shrimp, cheese and next 6 ingredients; spread mixture on baguette slices.

Bake at 350º for 5 to 10 minutes or until lightly browned. Top each with a shrimp half.
