1 tbsp. olive oil
½ cup chopped celery
¾ cup fresh or frozen corn kernels
¾ cup canned black beans, drained
½ cup prepared salsa
½ cup prepared chili sauce
10 eight-inch flour tortillas
8 ounces Monteray jack cheese, grated

Directions:
Preheat oven to 350 º . On the stove top, heat olive oil in a large skillet over medium-high heat. Add celery and saute1-2 minutes. Add corn and drained beans and cook1-2 minutes. Add sauces and mix thoroughly, heating through for 2-3 minutes. Remove from heat. Place tortillas on a board and divide the veggie mixture evenly among the tortillas and top with the grated cheese. Fold or roll the burritos and place in a baking dish. Cover the dish with foil and bake 10-15 minutes in preheated 350 º oven to heat through and melt cheese. Makes 10 burritos.
