4 medium zucchini, chopped
2 medium onions, chopped
1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 handful of carrots, chopped
¼ cup olive oil
2 cans (28 oz each) crushed tomatoes
1 can (15 oz) tomato sauce
1 can (15 oz) pinto beans – rinsed and drained
1 can (15 oz) black beans – rinsed and drained
1 can (15 oz) great northern beans – rinsed and drained
¼ cup each, minced basil and parsley
1 tsp. salt
1 tsp. ground cumin

Put everything in your crock pot. Cook on high 4-6 hours (according to the tenderness of the carrots).
