¾ C Sugar
¼ c Brandy
½ c Water
4 c whole milk Ricotta cheese
½ tsp. pure Vanilla extract
6 tbsp. Grated Bittersweet Chocolate
18 Ladyfingers

Directions:
Directions:
SYRUP: Combine the sugar, Brandy and water in a small saucepan. Bring to a boil over moderate hear, stirring to dissolve the sugar. Remove from the heat and transfer to a shallow bowl and let cool.
RICOTTA MIXTURE: In a large bowl, stir to combine the Ricotta, Vanilla and ½ Cup of the cooled syrup mixture. Fold in 4 tbsp. Grated chocolate.
Choose a 9x9 dish. One at a time, sink half of the ladyfingers in the syrup mixture to moisten them well. Arrange the Ladyfingers in a single layer in the dish. Spread ½ of the Ricotta mixture evenly over the Ladyfingers. Moisten the remaining Ladyfingers with syrup and arrange them over the Ricotta. Top with the rest of the Ricotta mixture, spreading evenly. Sprinkle the top with the remaining chocolate. Cover and refrigerate for several hours before serving.
