1 (18 1/4 oz.) Lemon Cake Mix
1/2 cup water
1/2 cup key lime juice
Zest of 1/2 regular lime or 2 key limes
1 (3oz.) pkg. lime jello
1/2 cup canola oil
4 large eggs slightly beaten

Frosting:

1/4 lb. butter softened
1 (8oz.) pkg. cream cheese, softened
1 tsp. vanilla
4 cups confectioner's sugar
1 to 2 tbsp. milk, as needed
Zest of 1 key lime or the zest of 1 regular lime

Preheat oven to 325º.

Spray 9x13 baking pan or dish with nonstick cooking spray or grease and flour lightly.

In a large mixing bowl, add cake mix, water, lime juice, lime zest, jello, canola oil and eggs. With an electric mixer, blend ingredients together until well combined - about 3 minutes.

Pour into prepared dish and bake in preheated oven for 30-35 minutes or until a toothpick inserted off center comes out clean.

For frosting, combine butter, cream cheese and vanilla with electric mixer. Add confectioner's sugar and blend until smooth and creamy. Add milk to reach the desired consistency (may not have to add any).

Spread frosting over cooled cake and garnish with lime zest.

This cake is rich, so cut small squares for the servings.
