3 lb boneless pork loin roast
4 cloves garlic
2 tsp salt
2 tsp oregano
3 tbsp minced fresh parsley
1 tsp black pepper
1 tbsp paprika
1/4 c. olive oil
2 lb small potatoes

Directions:
Directions:
Grind together salt and garlic. Add oregano, 1 tbsp parsley, pepper, paprika, and olive oil. Rub into pork loin and marinate overnight.
Boil 2 lb small potatoes for 10 minutes.
Put marinated pork in roast pan. Cook at 400º for 20 minutes. Reduce heat to 350º. Add potatoes - toss in pan grease. Cook at 350º for 45 min until 155º internal temp. Rest 10 minutes before slicing. Toss potatoes in 2 tbsp parsley
