1 medium onion, diced
1/4 c. butter
2 eggs
2 c. sour cream
1 can corn
1 can creamed corn
1/4 tsp salt
1/4 tsp pepper
1 box Jiffy corn muffin mix
2 c. shredded cheddar cheese
1 jalapeño, minced (optional)

Directions:
Directions:
Cook onion in butter until tender.
Spray 9x13 pan with non-stick spray.
Mix eggs, sour cream, both cans of corn, salt, pepper and muffin mix.
Add onion mixture, jalapeño and 1 1/2 c. of cheese.
Spread in 9x13 pan. Put 1/2 c. cheddar on top. Bake at 375º 35-40 minutes until toothpick comes out clean.
