2 1/2 c. sifted cake flour
1 2/3 c. sugar
1 1/4 tsp baking powder
1 1/4 tsp soda
1 tsp salt
2/3 c. shortening or butter
2/3 c. buttermilk
1 1/4 c. mashed bananas (3)
2 large eggs
chopped nuts (optional)

Directions:
Directions:
Sift dry ingredients together.
Add butter or shortening, 1/3 c. buttermilk, and bananas.
Beat vigorously for 2 minutes.
Add the other 1/3 c. buttermilk and eggs.
Beat 2 more minutes.
Fold in chopped nuts if desired. Pour batter into prepared pans (2 round or 9x13 oblong)
Bake at 350º for 30-35 minutes for layers or 45 minutes for oblong cake.

Regular flour = 2 1/2 c. minus 5 tbsp.
Buttermilk: mix 1 tbsp vinegar with 1 c. milk.
