2 lb. pkg. shredded hash browns
1 can cream of chicken soup
1 stick butter, softened
8 oz. carton sour cream
1 c. shredded Velvetta cheese
2 c. shredded cheddar cheese
salt and pepper to taste

Directions:
Directions:
Mix soup, butter, sour cream together. Add salt and pepper.
Stir in potatoes and Velvetta cheese.
Place in a greased 9 x 13 inch pan. Bake at 350ºF for 45 minutes. Add cheddar cheese over the top and bake an additional 10 minutes or until golden brown.

We have used this recipe for numerous funeral dinners because they are easy to make and serve large groups. Because they have been used so often, they became nicknamed "Funeral Potatoes".
