Crust:
4 C flour
1 lb butter (room temperature)
1 t salt
1 C ice water

Filling:
1 lb almond paste
2 C sugar
4 eggs (3 for filling and one just for egg white)

Directions:
Crust: Cut butter into flour and salt mixture (like pie crust). Add ice water, mix into a ball. Divide dough into 4 equal parts and refrigerate overnight. Take out 1 hour before using. Roll dough on floured board into 8x13 rectangle and cut in half lengthwise. When done you should have 8 strips of dough 4x13”.

Prepare the paste filling. Form the filling into 8 cylinders with a dime sized diameter. Put paste filling lengthwise down the center each piece of dough. Roll over dough to cover filling, moistening the side to seal closed. Place seam side down on cookie sheet. Brush tops with beaten egg white and sprinkle with sugar. Bake 10 minutes at 425. Prick several times with fork and bake for 10 minutes at 375º
