3/4 C walnut pieces, chilled
1 tsp sugar
1 tsp kosher salt
1/2 tsp baking powder
1/4 tsp black pepper
1/8 tsp nutmeg
3 large eggs + one egg white
3 T heavy cream

Spicy Cheddar Spread
1/2 lb. grated sharp cheddar
1/2 C unsalted butter at room temp, + 2 T melted butter
2 T dijon mustard
1 T worcestershire
1/4 tsp cayenne
Kosher salt and pepper to taste

Directions:
Directions:
Oven at 375º. Oiled 15x11" pan with oiled waxed paper.
Process walnuts, sugar, salt, pepper, baking powder and nutmeg until finely ground. pour into bowl. Add egg yolks and heavy cream. Beat the egg whites until stiff peaks and fold into the nut mixture. Spread in pan and bake until the center is set, about 8 minutes. Remove pan and let stand 5 minutes and peel away waxed paper. Roll roulade and cool. Fill, roll and slice.
Fill with Mushroom puree from Spinach Roulade or Spicy Cheddar Spread:
Combine all ingredients in food processor.
