6 lasagna noodles
3 eggs lightly beaten
3 c. cottage cheese
1/3 c. parsley
3T. drained Rotel
1 sweet red pepper, chopped
garlic powder
2 cans tomato soup
1- 10 oz can enchilada sauce
1 T. chili powder or taco seasoning
1 tsp. cumin
1/4 tsp. black pepper
4 c. bite sized cooked chicken
1 1/2 c. cheddar cheese
1 c. Monterey Jack cheese
Fresh Mushrooms, optional

Directions:
Directions:
Combine eggs, cottage cheese, parsley, and Rotel in a bowl and set aside. Brown red pepper and mushrooms. Add garlic powder, tomato soup, enchilada sauce, chili powder or taco seasoning, cumin, and pepper. Boil uncovered until thick. Layer noodles, cottage cheese mixture, chicken, veggie mixture, and cheese. Layer twice in a 9x13 pan and bake for 50 min at 350º. Let stand 15 min. before cutting.
