Penne with Vodka Recipe

1 tbsp olive oil
1 small onion, finely chopped
2-3 chilies, finely chopped
1 tsp dried basil or 2 fresh leaves
4 tbsp vodka
1 16oz can tomatoes
1 tbsp tomato paste
2 cups pasta (penne)
1 cup light cream
1 cup Parmesan cheese
freshly ground black pepper to taste

Directions:
Directions:
Heat the oil in a saucepan and lightly saute the onions, then add the chilies and fry for 2-3 minutes.
Add the basil and half the vodka to the saucepan, then increase the heat and add the tomatoes and tomato paste, breaking up the tomatoes with a wooden spoon. Bring to the boil, then reduce the heat and simmer, uncovered for about 30 mins, until you have a thick sauce.
Cook the pasta until it's tender (al dente). While it's cooking, add the remaining 2 tbsps of vodka to the sauce.
When the pasta has cooked, drain it and return it into the sauce. Take the saucepan off the heat and slowly add the cream, tossing it all together in the pan. Add the Parmesan and black pepper, and serve immediately
50 minutes to make.
