3 1/4 Cup all-purpose flour
1/2 tsp salt
1 tsp ground nutmeg
1 tsp ground nutmeg
2 tsp baking soda
1 tsp ground cinnamon
3 cups sugar
1 cup of vegetable oil
4 eggs, beaten
3 cups water
2 cups of grated zucchini
1 tsp lemon juice
1 cup of chopped walnuts or pecans

Directions:
Directions:
Preheat 350°F. In a large bowl, combine flour, salt nutmeg, cinnamon and baking soda.
In a separate, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredient into dry and add nuts and fold in. Bake in standard loaf pans, sprayed with non-stick spray for 1 hour, or until tester comes out clean. Alternatively, bake 5 mini loaf pans for about 45 minutes.
