Cake: 2 1/2 c. plain or cake flour, 1 tsp. cocoa, 1 1/2 c. sugar, 1 oz. red food color, 1 c. vegetable oil, 2 eggs, 1 tsp. salt, 1 c. buttermilk, 1 tsp. soda, and 1 tsp vanilla.
Filling: 1 box powdered sugar, 1 tsp. vanilla, 1 8 oz cream cheese, 1 c. chopped pecans, and 1 stick of butter.

Sift flour, salt, soda, and cocoa together; set aside. In another bowl, mix oil and sugar. Beat well. Add eggs. Beat well. Add food color and vanilla. Alternate flour and buttermilk. Mix well. Pour in 3 pans and cook at 350º for about 20 min. or until done. Ice with filling.
Filling: Sift sugar and set aside. Mix cream cheese and butter; add vanilla. Then mix sugar (well) in the mixture. Add pecans and spread on cake.
