6 quarts of beets
1 pint vinegar
1 c white sugar
1 c water
1/2 c flout
1 tbsp dry mustard
1 tbsp salt

Directions:
Directions:
Cook and dice beets. Boil vinegar, sugar, and water. Make a soft paste with flour, dry mustard, salt and a little water. Mix paste into brine. Add diced beets and bring to boil. Stir often. Pack into hot jars to seal.

To serve add finely chopped onion, celery and mayo.
