1 lb Ground Turkey
2 cans Whole Italian Tomatoes (28 oz cans)
1 Medium yellow onion, chopped
2 Garlic cloves, minced
1 Green pepper, chopped
8 oz. Sliced mushrooms
3 oz. Sliced black olives, canned
1/4 teaspoon Dried tarragon
1 teaspoon Dried fennel
2 teaspoon Rubbed sage
2 teaspoon Dried basil
1 Bay leaf
1/2 teaspoon Salt
1/2 teaspoon Black pepper
1 cup Chicken broth
1/4 cup Olive oil
1 lb or more of pasta
Grated Parmesan

Directions:
Directions:
1. Add 2 Tablespoons oil into a stock pot. Brown turkey until fully cooked breaking it up as it cooks. Remove turkey and set aside.
2. Add remaining oil to pot. Sauté garlic and onion until soft.
3. Add remaining vegetable and spices.
4. While vegetables are cooking, pulse whole tomatoes in a blender to slightly chop.
5. Add turkey, tomatoes and chicken broth into pan and simmer for 45-60 minutes to allow the flavors to combine. Add salt and pepper to taste.
6. Serve over your favorite pasta topped with Parmesan.
