2 c flour
1/4 c sugar
1/4 tsp salt
1 c butter
1/4-1/2 c ice cold water
FILLING:
4 c heaping huckleberries or 6 c peaches
2 Tbsp quick cooking tapioca
2 Tbsp cornstarch
1 c sugar

Directions:
Directions:
Mix together flour, salt and sugar. Cut cold butter into small pieces and add to flour mixture. Add 1/4-1/2 cup ice cold water and make 2 balls. Wrap in saran wrap and refrigerate for 15 minutes. Roll out into pie crust.
FILLING: 4 cups of heaping huckleberries or 6 cups of peaches mix with tapioca, cornstarch and sugar. Let sit for 15 minutes. Place in pie crust. Top with pats of butter. Bake at 425º for 10-15 minutes and then turn down over to 350º and bake for 30-40 minutes until the pie is done.
