1 red bell pepper
1 medium onion
Olive oil
3 pre-cooked chicken breast halves, boned and skinned*
about a cup of Hummus (I used CostCo Roasted Red Pepper Hummus)
1/2 cup -1 cup Feta cheese depending on how much you like Feta
8 burrito size flour tortillas

Directions:
Directions:
1. Finely chop red pepper and onion. Sauté with olive oil until onion is translucent, about 5 minutes. Set aside to cool.
2. Shred or finely chop pre-cooked chicken.
3. In bowl, fold together chicken, onion & red pepper mixture, hummus, and feta cheese until well blended.
4. Divide chicken mixture evenly on the 8 tortillas. Spread over tortilla leaving about an inch edge around the tortilla. Roll up tightly.
5. Refrigerate and serve. These are also very good warmed in oven or microwave.

* To pre-cook chicken I bake chicken breasts on my Pampered Chef bar pan. Coat pan with olive oil. Place chicken breasts on pan. Drizzle with olive oil and rub oil over top of chicken. Season generously with salt and pepper. Bake at 375 degrees for about 35 – 40 minutes, until juices run clear. This is a great way to prepare juicy chicken for any dish.
