8-10 flour tortillas
1 pound leftover taco meat
1 can diced green chilies
Diced onions you may have from taco night
2 tablespoons cilantro (if you have it from taco night)
1 cup shredded cheddar or Mexican blend cheese
2 10-ounce cans of enchilada sauce

Directions:
Directions:
Stir taco meat, diced green chilies, onions and cilantro together. Spoon mixture into flour tortillas and roll, placing in 9×13 baking dish, seam side down. Continue until pan is full.

Pour enchilada sauce evenly over the tortillas and top with shredded cheese. Cover and freeze until ready to use.

When ready to use, remove from freezer and bake at 350° for 35 to 40 minutes until the cheese begins to brown. Let sit for 5 minutes before serving.
