1 lb dry beans
1 white onion
1/2 lb smoked bacon or chorizo, your preference
la costena chipotles chilies (optional)
1 t dry epazote (Mexican stores)

Directions:
Rinse beans in a colander; leave beans in a bowl all night to soak in clear water.
In the morning the beans will be bigger.
With the same water, bring them to a boil. (this is the secret to have good digestion).
In a pressure cooker, add more water as double the space beans, height.
Add a piece of onion and a spoon of cooking salt.
Cook around 40 minutes.
(if you prefer not to cook them buy them ready to each, just cook with no flavoring)
Chop onion
In a saucepan bring the bacon or chorizo to melt slowly and use that oil to cook the chopped onion in small cubes.
When the onion is transparent, add the chipotle, one or two spoons of the juice.
Add the cooked beans and add the dry epazote, salt or chicken dry bouillon.
Slowly cook, move them constantly.
