3 lbs. apples, pared, cored and cut in small pieces
1 1/4 c. water
1 1/4 cup sugar
1 t. cinnamon
1/4 t. salt
2 T. cornstarch
2 c. flour
1/2 t. baking powder
1/2 t. salt
3/4 c. lard
1 T. lemon juice
1 egg
1/2 c. water

Directions:
Directions:
Boil 1 c. water, sugar, cinnamon and salt. Combine cornstarch with 1/4 c. watrer and add to sugar mixture. Cook for 5 minutes, stirring gently. Add apples and cook 10 minutes longer. set aside. Combine flour, baking powder, salt and lard until mixture resembles coarse crumbs. Mix together lemon juice, egg and 1/2 c. water and pour over flour mixture, blend gently with a fork and shape into a ball. Chill for several hours. Divide dough in half and roll out one half on a well-floured board to fit into a sheet pan. Fill with apple mixture. Roll out other half of dough, make air slits, put over top of apples. Flute edges. Bake at 450º for 20 minutes. Turn heat to 350º and bake 40 minutes longer, or until done. Cool slightly and drizzle with butter frosting.
