2 1/4 c cake flour
1 1/2 c sugar
1 tsp each salt, soda, baking powder
1/4 c butter (not margarine)
1/4 c crisco
1 tsp vanilla
1/2 tsp almond extract
1 c buttermilk
4 egg whites

Directions:
Directions:
Into large mixing bowl stir flour, sugar, salt, soda, and baking powder. Add butter, crisco, extracts, and approximately 3/4 c of the buttermilk. Beat on low speed until mixed. Turn to higher speed - beat 2 minutes. Add remaining buttermilk and egg whites - beat 2 more minutes. Pour into two greased and floured 9 inch pans. Bake at 350ºF for 25-30 minutes. Cool in cake pans for 10 minutes. Turn onto racks and continue cooling.

Mom's (Dianne) note: This was my favorite birthday cake when I was growing up - a white cake with white icing that my mom made.
