3.5 cups flour
1 tsp salt
4 eggs beaten
2/3 cup water - to be added slowly

Filling: 6 med potatoes boiled and mashed
1 lb sharp cheddar cheese
(melt cheese over potatoes and mash together. Let cool)

Add all ingredients together, let stad for about one hour.

Make the dough nto 3" squares. Fill with one tsp filling ad fold dough into a triangle, enclosing the filling and pinching the edges closed. Boil in water and small amt of oil. Boil 15 - 20 mins.

Melt butter and pour over the pastas. Serve with sour cream and a vegetable on the side, spinach or zucchini is great, as is a tossed salad! Spinach is best chopped fine & cooked.
