1/4 c olive oil
3/4 c sugar
2 t vanilla
1 t almond flavoring
2 eggs
1 3/4 c all purpose flour
1/4 t salt
1 t baking powder
1 c dried cranberries
1 1/2 c sliced almonds

Directions:
Directions:
Mix together oil and sugar. Add vanilla and almond flavoring. Beat in eggs. Combine flour, salt and baking powder and add to mixture. Mix in cranberries and almonds. Divide dough into halves and form 2 logs on a lightly greased cookie sheet. The dough will be sticky so wet your hands with water to handle. Bake in a preheat 300º degree oven for about 30-35 minutes. Let cool. Reduce oven to 275º. Cut the logs into 3/4 inch slices. Lay pieces on side on cookie sheet and bake for an additional 10 minutes.
