1 lb beans, pinto
1 ham hock
2 qts water
1 white onion
1 c chopped parsley
3 stalks celery, chopped
1 c green bell pepper
2 large garlic, crushed 3/8 t
1 t salt
1 t red pepper
1 t black pepper
1/4 t oregano
1/4 t thyme
3 dashes Tabasco
1 T Worcestershire sauce
1-8oz can tomato sauce
1 lb smoked sausage

Directions:
Directions:
Wash and drain beans.
Soak beans with ham hock.
Enough water to cover the ham hock.
Place in refrigerator overnight.
The next morning, drain off old water and add 2 qts fresh water to beans and ham hock.
Add salt and simmer for 1 hour until meat is tender.
Remove ham hock.
Add veggies, seasoning, and tomato sauce.
Cook slowly for 1 more hour, stirring occasionally.
Add sausage and cook for 45 minutes.
Remove meat from ham hock and add with the sausage.
