Kniffles (aka Spaetzle) Recipe

Ingredients: 2 cups Flour 1 egg Salt a little bit (optional) Milk

Directions:Put a large pot of water on the stove to boil. Mix flour, egg and salt in bowl. Add milk until the mixture is wet but still thick. I always use a fork and it should stand up in the middle of the bowl without falling. If it is too thin and the fork falls over just add a little more flour. When the water is boiling, you can use your kniffle maker to squish the dough into the water. Take a slotted spoon and give a gentle stir to make sure that the noodles do not stick to the bottom of the pan. When the noodles float, they are done and you can start scooping them out of the water. If you do not have a kniffle maker on hand you can also make these without it. You just need to make the batter thinner so that it can move to the edge of the mixing bowl when tilted. Use a clean fork, dip it in the boiling water and then cut the dough into the water from the edge of the bowl. Dip the fork into the water and cut the next line of dough into the water. By dipping the fork into the boiling water the dough will not stick. This method takes longer but I have done it. When the noodles are all done I normally put a dab of butter on them. |

Notes: My dad’s family always called spaetzle kniffles he didn’t know why but it is easier to say than spaetzle. Very easy recipe and goes good with gravy, yum!
