10 pounds potatoes
1/2 C. Shortening or butter
1/2 C. Heavy cream
1 tsp. Salt
1 T. Sugar
21/2 C. Flour

Directions:
Directions:
Peel and cook potatoes. Mix and mash all ingredients except flour and cool to room temperature. Kneed flour in thoroughly. On floured board take small amount (about walnut size) and roll into thin 8 inch circle 1/8 inch thick. Bake on hot ungreased griddle until bubbles form on top. Flip for a minute till lightly brown on both sides.

This is your Great Grandma Andersen's recipe and we have enjoyed them many different ways. My favorite is still with just butter! But serve them with gravy, jelly or what ever else you can come up with!!
