1/4 lb pork sausage
1/4 lb ham, cooked, finely chopped
1/4 lb corned beef, cooked, finely chopped
1/2 c onion, minced
2 t chives, minced
3 T flour
1 t salt
1/2 t pepper
1 t nutmeg
1/2 t cayenne pepper
1/2 t caraway seeds
1 c milk
3 c sauerkraut, rinsed, drained, minced & packed
2 eggs, beaten slightly
1/4 c water
1/2 t salt
bread crumbs
oil

Directions:
Directions:
Brown sausage. Drain. Add ham and corned beef. Heat. Add onions and chives. Cook till onion is translucent. Sift together 3 T flour, 1 t salt, pepper, nutmeg, cayenne and caraway seeds. Stir into meat, stirring constantly. Slowly add milk, stirring. Bring to a boil. Reduce and cook over low until thickened. Remove from heat. Stir in sauerkraut. Chill thoroughly. Beat water and 1/2 t salt with eggs. Form meat kraut mixture into balls. Roll balls in flour, then in egg. Coat with bread crumbs and deep fry or fry in electric skillet (with 3" oil at 375º) for about 2 min. till golden brown.
