½ cup warm water
1 package dry yeast (or 1 ½ - 2 tsp)
2 cups milk, warmed
1/3 cup (a little less than 1 stick) butter
1 tsp salt
1 tsp sugar
2 cups all purpose flour 2 eggs
¼ tsp baking soda

Directions:
Directions:
Use a large mixing bowl – the batter will rise to double its original volume.

Put water in a small mixing bowl and sprinkle in yeast (and a little sugar). Let stand to dissolve and get foamy.

Put butter and milk in a bowl and microwave for 2 minutes (to melt butter and warm milk).
Add all the other ingredients and beat until smooth and blended.
Stir in the yeast mixture.

Unused batter can stay in fridge for a few days.

(If these are really Joe’s waffles, top with vanilla ice cream and maple syrup – yum!)
