1 T oil
1 clove garlic, minced
1 10 oz pkg frozen spinach, thawed & drained
1/4 c cottage cheese
2 T Parmesan, grated
1/4 t pepper
1 lb veal cutlets or 4 veal scaloppini
1/4 c chicken broth
1/4 c white wine

Directions:
Directions:
Heat oven to 350º. cook garlic in oil till tender. Remove garlic to bowl and add spinach, cheeses, and pepper. Stir to mix. Place filling (evenly divided) onto veal. Spread. Roll up like jelly rolls, securing with toothpicks. Brown in oil. Put veal in baking dish. Add broth and wine. Bake 25 min. Thicken sauce when veal is done and removed. Serve over cutlets.
