4-6 skinned de-boned chicken breasts
2 Tbsp. olive oil
1 Tbsp. chili powder
2 tsp. garlic salt
2 tsp. paprika

PINEAPPLE SALSA:
1/4c. diced red pepper
1 small to med onion
3 Tbsp. light brown sugar
2 Tbsp. fresh Cilantro
2 Tbsp. oj
2 Tbsp. lime juice ( fresh is best, but not necessary)
1 Tbsp. chopped chipolte pepper in adobe sauce
1 Tbsp. butter
1 can pineapple- slices ( I have used both fresh and canned and it is fine with either one)

Pound chicken and spread a nice amount of mixed seasonings on top of one side of chicken breast. Put in fridge while you prepare the salsa.
Chop up all the veggies into small pieces.
For the salsa, mix first 6 ingredients in a bowl. (If you like a bit more of a "kick" in your salsa, then add a little more of the chipolte pepper to your salsa. Be careful they are potent!)
Melt butter in saute pan and cook pineapple for 2 minutes on each side. Cut into small pieces and all to the other salsa ingredients.
Grill your chicken until cooked through and top with the salsa. Enjoy!!

This is definitely a family favorite.
We usually have yellow rice, homemade guacamole and of course some yummy Margarita's with it!!
