"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 gallon whole sour pickles
5 pounds sugar
1/4 cup chopped or minced garlic
1 small bottle (4 6 ox) Tabasco or your choice of hot sauce

Directions:
Directions:
Drain all the liquid from pickles and slice into 1/4 inch pieces. Return sliced pickles to jar and add hot sauce, garlic and sugar. Stir every day for 10 (ten) days. This will make its own liquid. Can add more hot sauce if you want Fire Hot but they will be spicy.

It is not necessary to keep them in refrigerator during 10 day.

I love these pickles. If you make them without the hot sauce they are just like the ones they served at the Branch Ranch restaurant.
