1 beaten Egg
pinch of Salt
1/3 C Milk or water

Directions:
Directions:
Prepare the dough by mixing the flour, eggs and salt together. While stirring, add a little water or milk at a time until dough is smooth, but not too stiff. {If large eggs are used, then use less than the water or milk prescribed.}

Cook the dough by first heating up a large potful of salt water; Add a tablespoonful of oil to it. Fill the grater with part of the dough and grate the noodle into the boiling water. Use a ladle to lift up the noodle when they float to the top and keep them warm while the remainder of the dough is cooked by the same method.

Then noodles can be mixed with fried cabbage or used in soups or just buttered and grated cheese on top.
