3 medium unpeeled zucchini squash, coarsely grated (about 4 cups total)
1 1/4 cups Bisquick mix
1/2 medium onion, finely chopped (about 2/3 cup)
1/2 cup freshly grated Parmesan cheese
4 large eggs
1/4 cup oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:
Directions:
Preheat oven to 350º, Combine the zucchini, Bisquick, cheese, salt and pepper in a large mixing bowl. In another container, whisk the eggs and oil together. Add to the zucchini mixture and mix well. Spread in a greased ovenproof casserole dish (9 inch x 12 inch) and bake for 35 minutes or until the edges are lightly browned and the casserole is slightly puffed.

Other types of squash work well, too. Because of the salt content in the Bisquick, be careful not to add too much additional salt.
