5 lbs potatoes
1/3 cup vinegar
2/3 cup oil
2 tsp salt
pepper to taste
1/2 tsp mixed italian herbs
1 cup mayo
2 cups mayo
2 cups chopped celery
3/4 cup chopped scallions, with green
1/4 cup chopped stuffed olives (optional)
4 hard cooked eggs chopped
green pper and tomato for garnish

Directions:
Directions:
1. Cook potatoes in their jackets in boiling salted water until tender. Cool potatoes, slightly peel, cut into small cubes
2. Mix vinegar, oil, salt, pepper and herbs. Pour dressing over warm potatoes; cool
3. Mix mayo with celery, scallions, olives, and eggs. Combine with potatoes
4. Arrange on serving platter, garnish with strips of green and tomatoes slices
