6 large russet potatoes
1/2 c butter or margarine, softened
3/4 to 1 c milk or half and half cream
3 T crumbled cooked bacon
3 T finely chopped onion
1 T snipped chives
1/2 t salt
dash pepper
1 1/2 c (6oz) shredded cheddar cheese, divided

Directions:
Directions:
Bake potatoes at 375º for 1 hour or until soft.
Allow to cool, then cut a thin slice of the top of each potato.
Scoop out the pulp and place in a bowl; add butter and mash the pulp.
Blend in milk bacon, onion, chives, salt and pepper and 1 cup of cheese.
The potato mixture will be very thick and heavy.
Spoon into potato shells.
Top with remaining cheese and sprinkle with paprika.
Place on baking sheet.
Bake, uncovered at 375º for 25-30 minutes until heated through.
