1 bushel peas (blackeye, purple hull, cream peas)

Directions:
Shell peas, wash good and pack in jars to within 1/2 inch from tops of jars.
Put 1/2 t salt for pints, 1 t in quart jars.
Fill with boiling water to within 1/2 inch from top of jar. Place hot sterilized lids and bands on each jar, screwing band tight.
Process in pressure cooker-water in pressure cooker needs to be halfway up jars when they are placed in cooker.
Cook at 10 lbs of pressure for 30 minutes for pints, and 40 minutes for quarts.
Leave in pressure cooker after you turn out fire until the pressure gauge is at zero and the safety valves had closed.
(If you are on a salt restricted diet you can leave the salt out)
