1 C butter
1 tsp. salt
1 tsp. baking soda
1 1/2 C brown sugar
2 tsp. vanilla
2 large eggs
1 3/4 C unbleached all purpose flour
3 C quick cooking oats
1 3/4 C macadamia nuts (cut in half)
2 C (12 oz.) butterscotch chips

Directions:
Directions:
Preheat oven to 375.

Beat together the butter, salt, baking soda, brown sugar and vanilla.

Beat in the eggs, then the flour.

Add the oats, nuts, and butterscotch chips, and mix well.

Drop the dough by tablespoonfuls onto an ungreased cookie sheet and bake for 10-12 minutes, until they are light golden brown around the edges. Remove them from the oven and cool them on a rack.

Makes 4 1/2 dozen cookies.
