3 cups macaroni (any type)
2 qts water
2 Tbs Olive Oil or Vegetable Oil
1 tsp Salt
1/2 Stick Butter
1/4 cup flour
3 to 4 Cups Coconut Milk (slightly warmed)
1 Cup Gruyere Cheese
1 Cup Cheddar Cheese
1 Cup Mozzarella Cheese
1 cup Monterey Jack Cheese
Dash Cayenne Pepper (Optional)
2 Dashes Garlic Powder (Optional)
Cooking Spray

Directions:
Directions:
Heat oven to 350. Shred all cheeses and set them aside. In a large pot bring water, oil and salt to a boil. Add Macaroni and cook for about 10 minutes stirring constantly to prevent sticking. Drain macaroni. Spray a 9x13 glass dish with buttery oil/Pam. Pour Macaroni in the pan. In a saucepan/double boiler over medium heat melt butter; add flour until it makes a paste. Add warm coconut milk slowly, stirring constantly (to prevent lumping), until it begins to thicken. Add each cheese to mixture, stirring thoroughly as the cheese melts into sauce and mixture thickens. Add any optional ingredients and stir. Pour cheesy mixture over the macaroni. Top with panko bread crumbs, or paprika or just leave as is. Bake at 350 for about 35 minutes until mixture is solid in center and slightly brown on top.

Note: Amount of cheeses may vary according to your taste.
